Tony aka The Doctor has been the owner of the Bakery on O'Connell since day one and has been in bakeries for years before that! Being an independent family business Tony does it all from book work to baking to building and maintenance. He is not always in store but is always thinking and developing ideas for the business he loves. He is an extreme golf enthusiast and his competitive streak comes out in all its glory on the course, so be careful if you see him out there!
Shane aka Scratcha is the Manager at Bakery On O'Connell he has been a part of the bakery since day one! (March 17, 2003) He is passionate and dedicated to the bakery and everything that we do. Shane works nearly everyday doing anything and everything that's needed to keep the business running smoothly from banking and payroll to employee and supplier relations on top of wherever he is needed between service, shopping, baking, dishes, deliveries and more. No job is too big or small when you lead by example.
Katy aka Sarge has been with us since 2007 she is our online guru as she developed and manages all of our online presence and marketing. She is responsible for all front-of-house operations and has a hand in product development. Managing our 24 hour roster and training and development she works weekdays and every weekend doing all that is needed! She is a passionate and focused leader. For all catering enquiries, Katy is the one to talk too.
Anthony aka Lippy has been with us for years and family forever! He bakes bread, yeast buns and all things in between, makes great donuts and if you've been in at night lately, he has probably served you too!
(He invented the Nutella Heart!)
James aka Junior has been with us since the ripe old age of 15. He did his apprenticeship with us and has gone on to be an excellent baker. He jumps in the shop and serves whenever he is needed with an enthusiatic and happy presence! The ultimate all-rounder. He loves a good joke and is always up for a chat, especially if it's talking footy!
Joel aka Big Bear has been with us for over 10 years now and all through his apprenticeship, baking is in his blood! He is a perfectionist to say the least and has great patience to match. He keeps our young team working hard and quality control in check! Joel's hidden talents outside baking include golf, so next time your on the course look out for him!
Pete aka Pistol has been with us for many many years starting at the bakery with Joel and climbing his way up the ranks. He orders all the goods to make the food and keeps us baking around the clock as well as managing the bakers and loves a new creation or two! Pete's a party boy and seasoned traveler and brings a great atmosphere to the team.
This is most of our baking team and the crew who take so much pride in giving you the best they can its a very close knitted family.
We would like to advise the following; we do not make large specialty cakes for birthdays or other such events, our gluten free range is very limited as we bake everything on site the risk of contamination is very high and the range of bread available daily is limited until sold out. We specialise in pastries, donuts & catering with over 200 products on offer 24/7 and a café that seats over 80 people.
